Log Cabin Cooking

I'm really hooked right now on this easy chicken recipe I found using Kellogg Corn Flakes. It's so quick to prepare and I think it's so tasty - perfect for log cabin cooking cuz lord knows I don't like to spend hours in the kitchen! I'd rather be in my kayak.

Maybe some of you already know about this recipe? (And if you do, why didn't you tell me? LOL!) I like to use bone-in chicken thighs or breasts with this - very juicy! Do you have any favorite easy chicken recipes you like to make?

Ask Chip what he thinks!

Well I see you have FOUR pieces---One for you, one for Greg, one for Scout and one for Marvin... Poor Chip got left out... I can hear him crying!!!!! You should have made FIVE.

Love you,
Betsy

I think Colonel Sanders may have some competition with this. It looks delicious -- we'll have to give it a try.

If you like this chicken recipe and Chip likes it...I know we will like it. Actually, I might just make it for July 4th celebration. Thanks for sharing it. I think the evaporated milk would make it a moist chicken recipe. Have fun kayaking.

I just use regular old original Shake and Bake on my chicken and throw it in the oven for 30 min. on 400 degrees, flip it and turn the oven down to 350 degrees for another 30 minutes and Voila....juicy, yummy chicken. This looks similar, I think I tried it once.

Love the picture of Chip.
I know you will think this is very funny, but I have a box of the kelloggs bread crumbs and I never looked at the recipe on the box. I just dip my breasts (chicken of course) into some egg, then into the crumbs with some seasoning. AND YES, they are yummy! also good with pork chops!!!! I like crunchy food!!

A tip I have learned from a friend of mine who owns a bar/diner is to boil the chicken first the bake or grill to your recipe's desire. Amazingly the chicken is super moist and juicy doing it this way.
I like your recipe! Sounds yum!

PS We had bar-B-Q chicken the other night and low and behold our twenty six lb. cat jumpedn up in the chair and looked at us with a big meow and tryed to take a pc. Now this is the cat that can hardly move let alone jump. LOL

I make killer fried chicken, it's like my signature dish! Having said that though, I LOVE to make White Chicken Chili in the crock pot. It won't tie you up in your beautiful log kitchen so you can be out and about amongst nature!

Hi Shelley! My mom used to make fried chicken like that a long time. I am going to attempt it using your recipe, and we'll see what sort of disaster I manage to serve up! :-) Hope all is well and you're enjoying the summer! ~John

I do another version of this recipe, substitute finely crushed soda crackers for the corn flakes. This is my stand-by recipe for drop in company....quick and delicious!Just throw together a salad and pop some biscuits in the oven and VOILA!
